the goodness that is Lemon Curd


In order to give some background to this post I will have to travel back 3 years when Colette and I made our way to Scotland. Of course we wanted to see and do everything we could do while we were there. We were lucky enough to spend a week with some Scots from both Glasgow and Edinburgh. Fortunately they gave us a crash course in everything Scottish including common delicacies. One day while shopping they requested that we buy lemon curd. Of course not knowing anything about lemon curd I was curious about its purpose as a condiment. We were told that the yellow custard goes on toast like jam. We also learned that you should by the cheap stuff rather than the "posh" stuff because it apparently has more sugar and less lemon. It turned out to be some of the best stuff I've ever tasted. While in Logan I found that macey's carried a brand of lemon curd, but I have yet to see any of this marvelous stuff down in Salt Lake outside of the European store.

Luckily my good friend Colette recently travelled to that beautiful country. I requested only one thing....Lemon Curd (non posh)! Thanks Colette for packing the jar of yellow goodness home for me to spread on everything toasty and allowing me to re-live my Scotland days!

Beth--I got some from Carmen in Las Vegas--at Trader Bills. We can just make up some Lemon Pudding--kind of close. Love Mom
